As the Head Sommelier the candidate will be responsible for the wine aspects of the F&B division, sourcing new products and keeping up to date with offers as well as guest tastes and requirements. The candidate will control and maintain stock levels in the main cellar and in the outlets as well as maximize sales, identify opportunities and create a wine culture in the hotel in order to enhance revenues. RESPONSIBILITIES: Driving beverage revenue in the outlets and maintain beverage cost within budget Controlling and monitoring wine orders, stock and par level Creating and maintaining up to date wine list as per Four Seasons standards after coordination with Outlet managers on menu design Reviewing and analyzing sales to ensure stock rotation and profitability remains within targets Training all F&B team members on existing and new products, as well as selling techniques and any other necessary beverage trainings Building rapport with key suppliers and always checking on special offers and negotiating best price with suppliers Participating in strategy meetings pertaining to the different environment in the markets Tracking and sharing information regarding new business trends and generate new business opportunities.
