Executive Chef

компания "crowne plaza moscow - park huaming" soluxe hotel moscow is looking for a dynamic and experienced executive chef to direct the operations of our kitchens, including food preparation and quality, physical maintenance, and inventory functions, to ensure hotel quality standards and revenue goals are met and food and supply costs are controlled. our executive chef will be responsible for:• building a kitchen team and educating, training team members in compliance with brand standards, service behaviors, and governmental regulations;• ensuring that colleagues have all necessary tools and equipment to carry out job duties;• managing day-to-day kitchen activities and establishing performance of the kitchen team members through providing mentoring, coaching, and regular feedback;• developing menu designs and concepts for all food and bar outlets, and catering events while taking into consideration the industry trends;• maintaining updated and accurate costing and documentation of all dishes prepared and sold in the food and beverage operations;• completing forecasts, plans, and departmental production reports for management, participating in the preparation of the hotel’s annual budget;• maintaining procedures to ensure the security and proper storage of food and beverage products, inventory and equipment, replenishing supplies in a timely manner and minimizing waste and pilferage;• ensuring that all kitchen equipment and storerooms are in proper operational condition and are cleaned on a regular basis;• assisting f&b colleagues with menu planning, food and beverage coordination, table arrangements, decoration options, etc.;• assisting sales, catering and banquet colleagues with banquets, parties and other special events;• assisting with addressed customer questions and issues related to kitchen services;• adhere to governmental regulations as well as brand standards and hotel or company policies and procedures. our executive chef has the following qualifications:• the experience in supervising a large number of kitchen employees in a large full-service hotel with multiple major food and beverage outlets and extensive banquet facilities;• a completed degree or certificate in culinary arts and five years of experience as a chef, with at least two years in a supervisory capacity;• strong leadership and problem-solving skills;• is energetic, initiative and reliable, focused on the details;• is able to work under pressure and meet the deadlines with a minimum supervision.proficiency in english will be a plus. what we offer instead:• great team and unique experience;• competitive salary;• trainings and workshops in the related area according to areas of development; all further conditions will be identified with successful candidates.
